Minami Aizu Wild Plants
Minamiaizu Town, where the ryokan is located, is surrounded by mountains and is a treasure trove of spring wild plants from May to June. Here we introduce a variety of natural wild plants that grow wild in the Takabatake ski resort in Kita Nikko, a 6-minute drive from the ryokan. Why not add this rare experience to your travel schedule?

Bracken
It is one of the most familiar representative wild plants. Although it must be removed with baking soda, it can be used in a variety of dishes and has many recipes.

Udo
Its unique crunchy texture is appealing. After removing the acrid taste, please enjoy it with vinegared miso dressing, which is a standard dish.

Acanthopanax sciadophylloides
A popular food called “the queen of wild plants. It goes well with oil and is excellent in tempura and stir-fried dishes.

Sawtooth oak
A member of the Araliaceae family, the same family as cod sprouts, this wild plant is rapidly gaining in popularity. It is characterized by the spines that resemble burrs, from which it derives its name.

Flirtatious glance
This wild plant is easy for beginners to handle as it has no acridity or odor and does not require preparation. Its tender flesh is recommended for tempura and boiled vegetables.

Lemon day-lily
This root-curving bamboo shoot is the bamboo shoot of the snow country. It is so popular in urban areas that it is treated as a high-class wild plant.

Cod roe
Taraniki buds, or taraniki sprouts, are called the “king of wild plants” and are popular as a wild plant that heralds spring.

Giant butterbur
A highly nutritious wild plant containing potassium and manganese. Its unique aroma and bitterness are addictive.

Mainspring
This wild plant is characterized by its fluff-covered shape. It is one of the most popular and high-class wild plants, although it is necessary to remove its acrid taste.

Minamiaizu Vegetables
The Minamiaizu region has a favorable environment for growing crops, with its high altitude climate and temperature differences between day and night. Because of the limited production area, vegetables from Minami Aizu are not often distributed outside the region. We hope you will enjoy the high quality vegetables available only in the Minamiaizu area.

Nango tomato
Cultivated mainly in the Nango region of Minamiaizu Town, they are highly regarded throughout Japan for their fresh flesh and refreshing sweetness. Strict standards are set for the production, which enhances the brand value of Nango tomatoes.
Season: Late July - Late October

Aizu Tajima Asparagus
Asparagus grown in the Tajima area of Minamiaizu Town comes in four colors: green, white, purple, and pink, which are rare in Japan. Thick, fresh, and full of flavor, purple and pink asparagus in particular are rare vegetables that are rarely available to the general public.
Season: Late April - August

Tateiwa red turnip
It is a traditional vegetable of the Tateiwa area of Minamiaizu Town, characterized by its red outer skin. Since it is grown only in a limited area and its production is small, it is rarely sold outside of the region, and can only be purchased at local roadside stations and direct sales outlets.
Season: Late October to November

Minamiaizu Junen
Egoma is a type of sesame that has been actively cultivated in Shimogo Town and the entire Minamiaizu region for centuries. Egoma can be eaten as is to enjoy its crunchy texture, and there are many local foods that make use of its characteristics.
Season: From about November

Edible flowering dogwood
Unlike ordinary ornamental hozuki beans, these edible hozuki beans are produced in Shimogo Town and the Tajima area of Minamiaizu Town. With its fruity, sweet, and nostalgic taste, it is popular not only for eating fresh, but also for processed products such as jam and bread.
Season: August - September

Cabbage under snow in Shimogo Town
Cabbage grown in Shimogo Town, Minamiaizu County, is a vegetable unique to this area of heavy snowfall, where it is not harvested during the winter and left to lie dormant under the snow. The cabbage is protected from the winter cold, which increases its sugar content and concentrates its sweetness and flavor.
